A Seat Around The Fire: Discovering a new way to gather, dine, and connect in Northern Colorado with Canyons and Chefs

Communities have been coming together around the table for as long as humans have been gathering. It feels like a quintessential piece of the human experience: to come together with friends, family and strangers around a carefully crafted and prepared meal to learn about each other and experience true community together. As human connection has evolved, this gathering has evolved with us, but we often find the best forms of connection still happen around food. Now, Northern Colorado has gained a new and unique way to dine, connect to each other and nature, and develop a true appreciation for how your food is prepared. Canyons and Chefs is creating unique farm-to-fire experiences in some of the most gorgeous parts of Northern Colorado. We are so excited to introduce you to Billy Woods, founder and chef behind Canyons and Chefs.
He shared the history and heart behind Canyons and Chefs’ Farm to Fire experiences. Billy, can you tell us, “How was the concept of Canyons and Chefs and Farm to Fire experiences born?”
“We’ve combined our years in kitchens and backcountry wilderness into an exciting space that highlights local producers, farms, ranches, and makers to bring together our community and feature the incredible bounty of Northern Colorado.”

The This is NOCO team was lucky enough to attend one of these events in the fall and experience Billy working firsthand. There is truly something special about watching your food cook over a flame. The family-style setting allows you to connect with the food, nature, and those around you, from the harvest itself to sharing in the experience. We left feeling a deeper sense of connection to the earth and those around us, while also feeling incredibly satisfied with a delicious meal. I still think about the soup course months later.
So tell us, Billy, what do you hope people walk away from these experiences feeling?
“Connected to Fort Collins and the NOCO community, a deeper connection to our cultural and natural history, and a foundational appreciation for the farms, ranches, and producers that keep us fed and happy.”
All Farm to Fire meals are served family-style, with a huge emphasis on creating community and lasting relationships. Alcohol is not served at the events, but guests are encouraged to bring their own provisions. Events are timed around sunsets and last until after dark. They bring people together not only in a beautiful setting, but for a beautiful and meaningful purpose: to feel more connected to each other and the world around them.

Billy is bringing these events to Northern Colorado this fall and beyond. This September, you can join him at Alluvial Winery on September 14 and Velvet Ridge Elk Farm on September 24, both in Fort Collins.
